Low carb and delicious, this cauliflower omelette is a great breakfast or brunch option!

Ingredients:

-1 cauliflower, chopped -4 eggs, beaten -1 tablespoon olive oil or butter -Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400 degrees F.

  2. Spread the chopped cauliflower out on a baking sheet and roast for about 20 minutes, or until it's nice and soft.

  3. In a large mixing bowl, whisk together the eggs and olive oil or butter. Season with salt and pepper to taste.

  4. Once the roasted cauliflower is cool enough to handle, add it to the mixing bowl with the eggs and stir everything together well.

  5. Heat a large nonstick skillet over medium heat and spray with cooking spray. Pour in the egg mixture and let it cook for a few minutes until it starts to firm up around the edges. Then, place a lid on top of the skillet and turn the heat down to low so that the omelette can cook slowly until it's completely set in the middle. Remove from heat and serve hot!
